Nothing much really. The information behind whoever owns the licence plate is probably confidential and is kept by the DMV for use in perhaps in situations where the police might get involved. If you were in the UK, you might have a bit more luck, providing you know both the plate number and make of car.
For example, I know this particular Jensen 541 is registered in the UK under the licence plate YKX 257.
Popping that into the DVLA website will give me things like the first date of registration, when the tax will expire, year of manufacture, engine size, export marker, colour and whether or not it has a SORN or is actually registered for use on the road.

For a fee, there are some public record sites that will get you the owner's name, address, etc...
